A very pleasing casserole - warm, hearty not too calorific.

Recipe Ingredients for Chicken Moussaka

1 lb ground chicken
4 large potatoes
1 medium onion
750 ml canned crushed tomatoes
1/8 tsp ground cumin
1/8 tsp ground cinnamon
1/8 tsp nutmeg
1 eggplant
1 clove of garlic
1 tbsp butter
1 tbsp flour
2 tbsp olive oil
1 1/4 cups milk
1 tsp bay leaf
1 tsp salt

Recipe Directions for Chicken Moussaka

  1. Preheat the oven to 350 degrees F.

  2. Heat 1 tablespoon of olive oil in a large pan and slowly cook the onions over a medium heat, stirring occasionally.

  3. Pound the garlic in a teaspoon of salt, with the cumin and cinnamon with a mortar and pestle. Set aside.

  4. When the onions are soft and brown, add the tomatoes, garlic paste, remaining olive oil and chicken and bring to a bubble.

  5. Place the eggplant under the broiler and cook on each side until browned in places. When cooked, set aside.

  6. Set the milk on to scold with the bay leaf. When the milk reaches a boil, remove from the heat and allow to steep.

  7. Heat the butter over a medium heat, when melted, add the flour and cook, stirring for about 2 minutes. Add the milk through a sieve so as to drain the trimmings and using a whisk stir constantly until well combined and the sauce begins to thicken. Season with salt and pepper and a grating of nutmeg and allow to cook for about 5-10 minutes.

  8. To assemble, spread a few spoonfuls of the tomato & chicken sauce in a large casserole dish, the use half of the eggplant slices to make a layer, then layer with half of the potatoes. Continuing layering. When finished, pour the white sauce over the top.

  9. Bake covered for 20 minutes at 350 degrees F. Remove the cover and bake at 400 degrees F until browned and bubbling (about another 20 minutes). Remove from the oven and allow it to rest for about 10 minutes before serving.
