A recipe from Broke-Ass Gourmet. You put this on a taco or in a burrito or something; it is outrageous! The original recipe calls for chicken thighs-and the recipe comes out better with thighs--but I only had breasts this time.

Recipe Ingredients for chicken mole tacos

2 lbs chicken breast
15 ounces crushed tomatoes
2 onions
5 cloves garlic
2 tbsp canola oil
1 tsp cumin
1/2 tsp cinnamon
1/2 tsp paprika
1/2 tsp chile powder
3/4 tsp adobo
14 ounces chicken broth
2 tbsp reduced fat peanut butter
2 ounces semisweet chocolate chips
3 tbsp cilantro

Recipe Directions for chicken mole tacos

  1. In a large pot, heat oil, cook chopped onion until translucent. Add chopped garlic for a minute or so. Add in tomatoes, spices, pb, and chocolate. Let it simmer for 10 minutes.

  2. Then put the contents of the pot into a blender or food processor until smooth. Put back in the pot, put the chicken in and let simmer covered for 40-45 minutes. Then take chicken out and shred with two forks.
