16 oz Chicken, broilers or fryers, breast, meat only, raw
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
1 medium (2-1/2" dia) Onions
1 tbsp Butter
2 tbsp Cocoa, Dry Powder, Unsweetened
2 tsp unpacked Sugars, Brown
1 tsp Chili Powder
0.5 oz Ground Cumin
1/4 tsp Sea Salt
1/4 tsp Spices Ground Coriander
0.25 tsp Pepper, Red Or Cayenne
2.5 cup Corn, Sweet, Yellow
16 oz Sauce, Ready-to-serve, Salsa
8 biscuit Grands! Biscuits Flaky Reduced Fat
0.67 tbsp Butter

Recipe Directions for Chicken Mole Casserole

In a large skillet, saute the chicken, green pepper and onion in butter until chicken juices run clear and vegetables are tender. Add the cocoa, brown sugar and spices; cook and stir over medium heat for 1 minute. Stir in corn and salsa; heat through. Transfer to a greased 11-in X 7-in baking dish. Cut each biscuit in half. Arrange biscuit pieces over chicken mixture with cut sides facing outer edge of dish, overlapping slightly. Brush with melted butter; sprinkle with cornmeal. Bake, uncovered at 375 for 20-25 minutes or until biscuits are golden brown.
