Cooked, seasoned chicken breast topped with Broccoli and sauce.

Recipe Ingredients for Chicken Mitchell

18 oz Chicken breasts, 3 equal pieces
1/4 tsp seasoned salt
1/4 tsp garlic powder
1/4 tsp Oregano

Sauce:
2 tbsp margarine
2 tbsp flour
1 cup chicken broth
1/8 tsp nutmeg
1/4 cup parmesan cheese, grated
16 5/8 oz Broccoli

Recipe Directions for Chicken Mitchell

  1. Spray Pam on a heavy non-stick frying pan, placed seasoned chicken breast in pan and cook over medium heat until lightly browned on both sides, approx 8 to 10 minutes.

  2. Place Broccoli in covered, 1.5 quart casserole, add 2 tbsp of water and microwave on high for 8 minutes or until tender, set aside.

  3. In a small sauce pan melt 2 tbsp margarine then add flour and stir with whisk over medium heat until smooth and bubbly. Remove from heat and gradually add chicken broth stirring constantly, place back on heat stir constantly bring to a boil, boil for 1 minute.

  4. Remove from heat add 1/8 tsp nutmeg stir and add cup Parmesan cheese. Set aside.

  5. Slice chicken breast into large slices and place in a 9 x 13 backing dish,. Cover with Broccoli evenly, and pour sauce over all.

  6. Place baking dish in oven and broil until sauce is bubbly and lightly browned.

  7. Serve and enjoy.
