Chicken and pasta in a rich garlic cream sauce with sundried tomatoes. Takes 30-40 minutes and 3 burners on your stove. ;)

Recipe Ingredients for Chicken Milano [AllRecipes]

2 tbsp. vegetable oil
1 lb. boneless skinless chicken breast halves , plus salt and pepper for seasoning
1 tbsp. butter
2 cloves garlic, minced (about 1 tsp.)
1/2 cup chopped sundried tomatoes (dry packed, not packed in oil)
1 cup chicken broth, divided
1 cup heavy cream
2 tbsp. chopped fresh basil
1/2 lb. fettuccine or other pasta (I like farfalle for this)

Recipe Directions for Chicken Milano [AllRecipes]

  1. Start a pot of water boiling for the fettuccine, and cook according to directions. Continue with chicken and sauce. Do not drain pasta until ready to serve.

  2. Meanwhile, warm oil in a large saute pan. Season the chicken breast halves with salt and pepper and add to pan, cooking on medium heat about 4 minutes on each side or until fully cooked. (It normally takes me 6 or 8 minutes per side, unless the breasts are flattened.)

  3. While chicken cooks, melt butter in a medium saucepan on low heat. Add garlic and cook about 30 seconds, then add sundried tomatoes and 3/4 cup of the chicken broth. Raise heat and bring to a boil; then reduce heat and simmer about 10 minutes, until tomatoes are softened. Add cream and raise to a boil again, then simmer until sauce is thick enough to coat the back of a spoon.

  4. When chicken is fully cooked, remove to cutting board and drain off fat. Return saute pan to medium heat and add remaining 1/4 cup chicken broth to deglaze the pan. Stir and reduce to about half, then add to cream sauce. Add basil and stir.

  5. Cut chicken diagonally into strips as desired. Drain pasta and stir in a few tablespoons of the sauce. Serve pasta with chicken on top, then spoon sauce over all. (Or, for a more family-friendly style, mix all into one bowl to serve at the table.)
