Chicken Marsala - weight watchers - 6PP

Recipe Ingredients for Chicken Marsala - ww

1 lb boneless skinless chicken breasts
1/2 tsp salt
1/2 tsp pepper
2 tsp olive oil
8 oz mushroom slices
2 tsp flour
1/4 cup marsala wine
1/4 cup chicken broth

Recipe Directions for Chicken Marsala - ww

  1. thin slice cutlets

  2. sprinkle chicken w salt & pepper

  3. heat oil in large skillet over med-high heat

  4. add chicken & cook through, @ 3 minutes on each side

  5. transfer chicken to platter & keep warm

  6. add mushrooms to skillet & cook, stiring frequently, until browned, @ 3 minutes

  7. sprinkle mushrooms with flour, stirring to blend

  8. add the marsala & broth; bring to a boil

  9. Let the mixture simmer until it is slightly thickened, @ 5 minutes.
