This dish reminds me of beef stroganoff in its rich full flavor. I think the Calorie Count analysis is off, because it's including all the oil, which you only use to fry in. The Eating Well cookbook this came from says 325 calories, 9 grams fat (not 16), and 4 grams of fiber.

Recipe Ingredients for Chicken Marsala Stew

1 lb. mushrooms, cleaned and sliced (view)
3 onions, chopped (view)
3 T flour, all purpose (view)
2 cloves garlic, finely chopped (view)
1/2 c dry Marsala wine (view)
1 1/2 c low fat chicken broth, low sodium (view)
1 T balsamic vinegar
1 lb. boneless, skinless chicken breasts, cut into chunks, trimmed of fat
2 T olive oil

Recipe Directions for Chicken Marsala Stew

  1. In dutch oven or large saute pan with a lid, heat 1/2 T oil over medium high heat. Add 1/2 the chicken pieces and season with salt and pepper. Brown chicken pieces, stirring occasionally, until the meat is no longer oink in the center, about 6 minutes. Transfer to a plate and repeat with another 1/2 T oil with the remaining chicken. Set aside.

  2. Add another 1/2 T of the oil to the pot. Add mushrooms and cook, stirring until they begin to soften and give off liquid, 3 to 5 minute. Transfer to a bowl and set aside.

  3. Add the last 1/2 T oil to the pot, Add onions and cook, stirring, until they soften and start to turn golden, about 10 minutes. Add flour and garlic and cook, stirring, about 1 minute. Pour in the Marsala and cook, stirring, for two minutes longer. Add chicken broth and the reserved mushrooms. Bring to a simmer, reduce the heat to low and cover the pan. Cook, stirring often until the mushrooms are tender, about 15 minutes. Add balsamic vinegar and the reserved chicken. Return to a simmer and season with salt and pepper if needed.

  4. Serve over wide egg noodles (can use Dream Fields low carb) with a green salad and orange vegetable for a meal with an ideal balance of nutrients.
