Recipe Ingredients for Chicken Marsala

16 oz chicken breasts, boneless, skinless
1/4 cup fat free italian salad dressing
2 tsp soy flour
1/2 tsp italian seasoning
1/2 tsp garlic powder
1/4 tsp paprika
1/4 tsp pepper
1 tbs olive oil
1 tbs Low fat butter
1/2 cup low sodium chk broth
4 oz dry white wine
1 lb fresh mushrooms, sliced
3 tbs parsley, chopped

Recipe Directions for Chicken Marsala

  1. Take two 8 oz chk breast cut in half.

  2. Flatten Chk to 1/2 in thickness. Place in a large plastic sealable bag; add salad dressing. Seal bag and turn to coat; refrigerate for 8 hours or overnight.

  3. Drain and discard marinade. Combine the flour, Italian seasoning, garlic powder, paprika and pepper. Sprinkle over both sides of chicken. In a large nonstick skillet coated with cooking spray, cook chk with 2 tsp oil and butter for 2 min on both sides or until browned. Transfer chk to a 8in x 8in baking dish coated with cooking spray.

  4. Gradually add broth and wine to the skillet, stirring to loosen browned bits. Bring to a boil; cook and stir for 2 min. strain sauce, set aside. In the same skillet, cook mushroom in remaining butter and oil for 2 min. Stir sauce into mushrooms; heat through. Pour over chicken, sprinkle with parsley. Bake, uncovered, at 350 for 25-30 min or until juices run clear.
