Chicken Marsala from BHG cookbook. (per 1/2 breast)

Recipe Ingredients for Chicken Marsala

1 1/2 lbs chicken breast, skinned, boned and halved lengthwise (2 whole)
1/4 cup flour, all-purpose
1/4 t marjoram, dried, crushed
1 cup mushrooms, fresh, sliced
2 T green onion, sliced
3 T butter
1/4 cup chicken broth
1/4 cup wine, dry marsala
1/8 t salt
1/8 t pepper

Recipe Directions for Chicken Marsala

  1. Rinse chicken; pat dry. Place each breast half, boned side up, between 2 pieces of clear plastic wrap. Working from the center to edges, pound lightly with the flat side of a mallet until 1/8 inch thick. Remove the plastic wrap. Stir together flour, marjoram, salt and pepper. Lightly press chicken pieces into flour mixture on both sides; shake off excess.

  2. In a large skillet, cook mushrooms and green onion in 1 T of the butter until tender; remove from skillet. In the same skillet, cook chicken pieces in remaining butter over medium-high heat for 4 minutes, turning to brown evenly. Remove skillet from heat.

  3. Return mushrooms and onion to skillet. Carefully add broth and marsala. Cook, uncovered, 2 to 3 minutes or until mushroom mixture thickens slightly, stirring occasionally. Transfer chicken to a serving platter. Spoon mushroom mixture over. Sprinkle with snipped parsley, if desired.
