Adapted from a Food Network recipe. Very easy, and very delicious. Got great compliments from my guests.

Recipe Ingredients for Chicken Marsala

1/4 cup all-purpose flour
32 oz. chicken breasts, boneless, skinless pounded thin
3 tablespoon olive oil
3 tablespoons butter
1/2 cup onion, red, chopped
1 tsp garlic, chopped
3 cups sliced mushrooms (button, cremini, oyster, shiitake, and portabella)
1 cup wine, marsala
1 Salt and pepper, freshly ground black
1/4 cup parsley, flat leaf Chopped for garnish

Recipe Directions for Chicken Marsala

  1. Put flour into a shallow bowl or plate. Quickly dredge the chicken breast halves in the seasoned flour mixture, shaking to remove any excess flour.

  2. Heat 2 tbs of the oil in a large skillet over medium-high heat until very hot but not smoking. Add 1 tablespoon of the butter and cook the chicken breasts until golden brown on both sides, about 3 minutes per side. Transfer to a plate and set aside. Add 1 tablespoon of the remaining butter to the pan and add the mushrooms. Cook, stirring frequently, until mushrooms are golden brown around the edges and have given off their liquid. If you don't have a pan big enough for the mushrooms to be spread out, saute them in two batches, so they brown rather than steam. Put all mushrooms aside. Melt 1 tablespoon each of olive oil and butter. Saute onions and garlic until golden, about 4 minutes. Add the Marsala wine and bring to a boil, scraping to remove any browned bits from the bottom of the pan. Cook for 3 minutes, or until the sauce has thickened slightly. Lower the heat to medium and return the mushrooms to the pan. Add salt, pepper, and parsley.

  3. Arrange chicken breasts on searving platter, spooning the mushroom sauce on top. Add additional parsley as garnish.
