Recipe Ingredients for Chicken Marsala

1 1/2 pounds boneless, skinless chicken breast halves
1 tbsp olive oil
1 tbsp salted butter
1 small onion
8 ounces button mushrooms
1/2 cup Marsala wine
1/2 cup low-sodium chicken broth
1 tsp cornstarch
2 tbsp chopped flat leaf parsley

Recipe Directions for Chicken Marsala

Butterfly the chicken breast halves and pound to an even ˝ inch thickness. Season the chicken with salt and pepper and dust lightly with flour. Heat the olive oil in a large nonstick skillet over medium high heat and sauté the chicken cutlets until lightly browned on both sides, about 2 minutes on each side; transfer to a serving platter when finished. Add the butter to the remaining olive oil in the same pan and sauté the onion and mushrooms until the liquid has evaporated and the mushrooms start to brown, about 4 minutes. Add the wine chicken broth and the chicken with any accumulated juices from the platter and simmer 3-4 minutes until the chicken is cooked through. Transfer the chicken back to the serving platter; thicken the sauce with the cornstarch mixture. Stir in the parsley and pour the sauce over the chicken.
