Recipe Ingredients for Chicken Marsala Light

2 tsp olive oil
1 cup mushrooms
1 lb boneless skinless chicken breast
1 tsp dried thyme
1/2 tsp table salt
1/4 tsp black pepper
1/2 cup marsala wine
1 1/4 cup canned beef broth
1 1/2 tbsp cornstarch

Recipe Directions for Chicken Marsala Light

  1. heat oil in large skillet over medium high heat

  2. add sliced mushrooms saut'e until tender

  3. meanwhile place chicken on plate and season both sides with spices

  4. place chicken in center of skillet and saut'e until golden brown on both sides

  5. add wine to skillet simmer 1 minute and add .75 cup of the beef broth simmer uncovered until chicken is cooked through

  6. dissolve corn starch and remaining broth
