Chicken lightly dredged with flour and sauteed with tomatoes and marinated artichoke hearts

Recipe Ingredients for Chicken with Marinated Artichoke Hearts

1 1/2 lbs Chicken Breast
1/4 cup Flour
2 tbsp Olive Oil
3 cloves Garlic
1 can artichoke
1 pint Grape Tomatoes
1 cup chicken broth, reduced sodium

Recipe Directions for Chicken with Marinated Artichoke Hearts

  1. Cut grape tomatoes in half and set aside.

  2. Dredge Chicken in flour and shake off excess.

  3. Heat oil in large skillet and brown chicken pieces on both sides.

  4. Removed chicken to a plate; add garlic and cook until just brown.

  5. Add tomatoes to the pan, stir until just wilting.

  6. Add drained marinated artichoke hearts, chicken and chicken broth.

  7. Simmer, turning chicken several times, until done.

  8. Season to taste with pepper and serve alone or over pasta.
