Chicken Marengo without butter and less flour

Recipe Ingredients for Chicken Marengo Lighter

2 tablespoons canola oil
1 large onion
4 garlic cloves
1 1/2 pounds boneless chicken breast
1/3 cup flour
1 teaspoon sea salt
1/2 teaspoon red pepper flakes
15 ounces crushed tomatoes
1 cup chicken broth
1/2 pound mushrooms
2 tbsp lemon juice
1 tbsp extra virgin olive oil
1/4 cup basil, torn
3 tablespoons Italian parsley, chopped

Recipe Directions for Chicken Marengo Lighter

  1. Sauté the onions and garlic in vegetable oil until translucent.

  2. Cut chicken into one inch pieces and place in a shallow baking dish or pan.

  3. Add pepper flakes and stir chicken to distribute

  4. Dust chicken with flour. Use a sifter to lightly dust the chicken turning chicken as needed to coat.

  5. Add chicken to pan and lightly brown on all sides

  6. Add crushed tomatos and broth to pan and stir in to deglaze the pan

  7. Simmer on low for 45 minutes.

  8. In a separate saute pan, saute portobello mushrooms diced to 1/3 in pieces in olive oil until tender

  9. Pour lemon juice over mushroom when cooking is complete

  10. Add mushrooms and parsley to pan and serve
