A lightened version of the classic from "The Silver Palate"!

Recipe Ingredients for Chicken Marbella

2 1/2 pounds chicken thighs, boneless, skinless
12 cloves garlic
1/4 cup oregano, dried
1/2 cup vinegar, red wine
1/4 cup olive oil
1 cup prunes, pitted
1/2 cup olives, Spanish, green
1/2 cup capers, with a bit of their pickling juice
6 tablespoons bay leaves
1/2 cup brown sugar
1/4 cup wine, dry, white
1/4 cup parsley, chopped

Recipe Directions for Chicken Marbella

  1. Combine all ingredients thru bay leaves (recipe calls for 6 whole, but website does not recognize this unit) in large bowl, toss, cover and refrigerate overnight

  2. Remove chicken from refrigerator and preheat oven to 350

  3. Arrange chicken in single layer in baking dish that comfortably holds all in a single layer. Spoon marinade over chicken. Sprinkle chicken with brown sugar and pour wine around them

  4. Bake uncovered for 35 - 40 minutes, basting every 10 - 12 minutes with pan juices. Chicken is done when juices from a pricked thigh run clear.

  5. With slotted spoon transfer chicken, prunes, olives and capers to a serving platter, moisten with a few spoons of pan drippings and sprinkle generously with chopped parsley. Pass remaining pan juices in gravy boat. Can also be served at room temperature with warmed pan juices.
