Recipe Ingredients for Chicken and Many Bean Soup

1 tbsp(14 g) Olive Oil, Extra Virgin, Organic
1 cup, chopped Onions
2 tbsp Parsley
0.25 fruit without seeds Lemons
2 cup, sliced Fennel, Bulb
24 oz Chicken
64 oz Organic Low Sodium Chicken Broth
1 cup, chopped Carrots
1 cup, diced Celery
1 cup Beans
3 cups Baby Spinach
2 cup (8 fl oz) Water
1 cup, chopped(160 g) Onions
1 clove Garlic

Recipe Directions for Chicken and Many Bean Soup

Cook beans in enough water to cover by 2 inches. add 1 chopped onion and 1 clove garlic. bring to boil then simmer till tender. In another pot saute onion in olive oil till softened, about 5 min. Tie together and add to pot several sprigs parsley, 3 strips lemon zest and tops from 1 fennel bulb. Add chicken broth, add cubed chicken breasts,bring to a simmer till cooked. remove chicken and set aside. Add carrots, celery and fennel to pot.cook till vegetables are barely tender. add chicken and beans back to pot till all is heated through then add spinach till wilted.
