Recipe Ingredients for Chicken Manicotti

344 g chicken breast, 2 breasts minced
1 onion, chopped
1 teaspoon garlic, minced
1 tablespoon parsley
1 teaspoon oregano
16 ounce pasta sauce
8 ounce Pasta shells
2 cup shredded mozzarella cheese
3 cups ricotta cheese
2 tablespoons dried basil
1 tablespoon extra virgin olive oil

Recipe Directions for Chicken Manicotti

  1. Preheat oven to 375 degrees F (190 degrees C).

  2. Bring a large pot of lightly salted water to a boil. Add manicotti and cook for 6 to 10 minutes or until al dente; drain.

  3. Cook the chicken in a skillet over medium-high heat until evenly cooked. Transfer meat to a large bowl. Place onion and garlic in the skillet, with evoo and cook until onion is tender. Transfer to bowl with chicken. Mix the parsley, basil, and oregano into the bowl.

  4. Mix 1 cup mozzarella and 3 cups ricotta into the meat mixture.

  5. Spread 1/4 the pasta sauce over the bottom of the baking dish. Stuff manicotti shells with the meat mixture, arrange in the baking dish, and cover with remaining sauce.

  6. Cover pan with foil, and bake manicotti 15 minutes in the preheated oven. Uncover, sprinkle with cheese, and continue baking 10 minutes, until bubbly.
