Uses 5 lasagna noodles and part skim mozzarella cheese or you can use italian blend just make sure the nutrition info is comparable. Use a spaghetti sauce that is low in sodium.. this one had 510 grams per 1/2 cup. I used Bertolli organic sauce.. Be sure whatever you use has no high frutcose corn syrup. Also watch the fat grams. The one I used had 3.5 grams of fat per serving, but it had olive oil in it.

Recipe Ingredients for Chicken Manicotti

4 oz dry whole wheat lasagna
8 oz 1% cottage cheese
2 large egg whites
8 oz pasta sauce
7 oz chicken breast
5 oz cooked spinach
1/4 tsp black pepper
3/4 cup mozzarella cheese
1 clove garlic minced

Recipe Directions for Chicken Manicotti

Cook noodles. Cook chicken chop into small pieces. In a bowl combine chicken, cottage cheese, egg whites, spincach, pepper, garlic and 1/4 cup cheese. Take lasanga noodles and cut in half. Take 1 piece of noodle and place in 2 qt baking dish place about 3 TBS. of chicken mix in center Roll up like a burritto. Do this with all noodles. pour 1 cup of spaghetti sauce over noodles. Bake in oven at 350 for 25 minutes. Cover with 1/2 cup cheese continue baking until cheese is done.
