Recipe Ingredients for Chicken Mainara

1 lb Skinless Chicken Breast
1 Green Pepper, cut in strips
1 Red Pepper, cut in strips
1/4 Onion, cut in strips
1 medium Zucchini, cut in strips
1 large carrot, cut into strips
1/2 tsp dried Oregano
1 (14oz) Stewed Tomatoes, Italian Recipe
1/2 cup of black olives, sliced
1/2 tbs Olive oil
1 tsp salt
1 tsp black pepper

Recipe Directions for Chicken Mainara

  1. Flatten chicken breats with meat hammer (about 1/2" thick).

  2. Dust chicken with salt, pepper, and oregano.

  3. Heat a large frying pan up over Medium-high heat.

  4. Add oil; cook chicken until lightly browned on both sides (about 3mins per side)

  5. Remove chicken from pan

  6. Add bell peppers, carrot, zucchini, tomatoes, olives, and onion to pan. Cook, covered, for 3mins.

  7. Return chicken to pan, and cook, uncovered, until veggies and chicken are tender (at least 5mins).

  8. serve with pasta or by itself!
