Chicken Breasts poached in savory sauce. This is easy to prepare; a one skillet dish and is very, very tasty. The "Madeira" in the title is a Madeira wine. 1/3 - 1/2 cup if you want to add along with the spices. I don't add it and don't miss it, so I left it out of the recipe.

Recipe Ingredients for Chicken Madeira

2 tablespoons butter
1 medium onion, chopped
1 large carrot, thinly sliced
3 tablespoons all-purpose flour
1 teaspoons dried parsley
1 cup chicken broth
1/4 teaspoon black pepper
1/8 teaspoon mace
1 beef bouillon cube
1/4 teaspoon thyme
3 tablespoons orange juice
12 oz chicken breasts (4 breasts @ 3 ounces each), skinless and boneless

Recipe Directions for Chicken Madeira

Melt butter in large skillet over medium low heat. Add onion & carrots. Saute until soft - about 5 minutes. Add flour & parsley. Continue to saute for 1 minute, stirring. Add remaining ingredients, except chicken breasts. Bring to a boil. Return heat to medium low; add chicken breasts. Cover and cook for 15 minutes, or until chicken is cooked through.
