A mild, more subtle version of chicken and vegetabe biryani from the United Arab Emirates.

Recipe Ingredients for Chicken Machbous

500 g chicken, wholelegs
1 tbs canola oil
3 onions, medium
1 tomato, large, skinned & chopped
1 tsp garlic paste
1 tsp ginger paste
1 potatoe, large, skinned and cubbed to share between all
2 medium carrot, sliced
1 serving Season-It All Spice
1 /4tsp cumin
1 /4tsp cinnamom
1 /2tsp cardamom
1 /2tsp low sodium salt
1 tsp turmeric powder
1 tsp Chicken Flavor Bouillon
2 tsp lemon, squeezed
1 1/2 cups Long Grain Brown Rice
500 ml water

Recipe Directions for Chicken Machbous

  1. Quickly, lightly brown the chicken in the canola oil.

  2. Add and saute the onions, garlic & ginger untill the onions have turned translucent

  3. Then add the salt, spices& maggie cube untill their arroma has really started to waft through the air.

  4. Then add the chopped tomato. Give it a toss to soak up the flavour of the spices.

  5. Next add the sliced carrot, potatoes, lemon juice and water.

  6. Cover, bring the water to a boil, then lower the heat and allow the dish to simmer about 15mins (check that the potatoes are easily pearced with a fork)

  7. Finally, add the rice, bring the water to a boil and then lower again to allow dish to simmer for about 10mins or untill water has been well absorbed by the rice and no more juices are visible at the bottom of the dish. You can check for this by using a spoon or butter knife and gently digging it into the middle of the dish to peer into the bottom of the dish.

  8. If no more liquid is visible and rice is tender to the bite; remove the dish from the heat (so not to crush the vegetables or rice when dishing the pot out onto a serving dish). WARNING THIS CAN BE TRICKY... Remove the lid. Cover the pot with a round serving dish. Using you oven gloves, quickly flip the pot over whilest grasping the dish in place so that the ingredients come out neatly onto your serving dish.
