Recipe Directions for Chicken Love Soup

  1. In a large soup pot, bring olive oil up to heat. Chop and season chicken thighs and place them in pot with crumbled sausage. When meat is almost fully cooked, remove and reserve. In the same pot, throw in your finely diced onion and let sweat until translucent. At this point add your chopped garlic and stir constantly to avoid burning. Add in your can of drained and well rinsed beans. Cook for 2 minutes. Add in your broth and water and let come to a simmer. Finally add in your spinach and reserved meats and simmer on low for 30 minutes. In a separate pot prepare orzo to package.

  2. Add a serving of orzo to a warm soup bowl then top with soup and enjoy!
