Needs a food processor, freezes well

Recipe Ingredients for Chicken loaves

240 g chicken breast
40 g celery
1 small onion
60 ml parsley
5 ml thyme
5 ml sage
125 ml dried cranberries

Recipe Directions for Chicken loaves

  1. Remove any fat from chicken. Cut into chunks and place in food processor.

  2. Trim and wash celery Cut into chunks and add to chicken.

  3. Roughly chop onion and add to chicken.

  4. Mix in cranberries.

  5. Pack into loaf tins lined with baking powder.

  6. Bake at 180 degrees celcius for 35 mins and leave to stand for 35mins

  7. Cut into individual loaves.

  8. When cold freeze - in tightly packed plastic bag.

  9. To serve -THaw in the fridge then heat at 150 degrees for 15 min.

  10. Serve with crandbery sauces if desired.
