Healthier version of chicken lo mein.

Recipe Ingredients for Chicken Lo Mein

16 oz Hodgson Mill Whole Wheat and Flaxseed Fettuccini
2 T Canola Oil
8 oz chicken breast
1 tsp cracked black pepper
1 cup diced onion
1 cup chopped snow peas
2 cups bean sprouts
1 cup sliced crimini mushrooms
1/4 cup soy sauce
1/8 cup mirin

Recipe Directions for Chicken Lo Mein

  1. Cook fettuccini according to package directions

  2. Heat 1 T oil in large skillet over med-hi heat. Cut chicken breast into 1/2" cubes.

  3. Season with 1/2 tsp cracked black pepper.

  4. Add chicken to skillet and stir-fry until chicken is cooked (about 5 min.).

  5. Remove chicken from skillet.

  6. Add remaining 1 T of oil to skillet.

  7. Add onion, snow peas, sprouts, and mushrooms and cook until tender (about 5 min.).

  8. Whisk together soy sauce and mirin in small bowl.

  9. Add the chicken and the sauce mixture to the skillet and stir.

  10. Add drained fettuccini to the skillet and toss to combine all ingredients.

  11. Stir-fry for about 2 min. or until sauce begins to thicken and fettuccini is thoroughly coated.
