Spicy (according to salsa heat) and delicious, easy to make soup. Use natural chicken stock or low sodium store bought chicken broth.

Recipe Ingredients for Chicken Lime Soup

2 tbsp lime juice
1 cup salsa
1 1/2 cup chicken
5 cups chicken stock
1/2 tsp oregano
1/2 tsp chili powder
1/2 tsp cumin powder
1 cup black beans
1 cup frozen corn

Recipe Directions for Chicken Lime Soup

  1. Cook chicken breast on BBQ and dice or dice raw chicken and cook in pot until no longer pink. Pepper as desired. You can also use leftover skinless roast chicken or turkey.

  2. Add chicken broth, salsa, spices and corn.

  3. If using canned black beans, rinse thoroughly to remove salty residues, then add to soup.

  4. Cook until hot, then serve.

  5. Optional topping: cut whole wheat pita into thin strips, then toast in oven or toaster oven. Add like crackers to soup. Enjoy!
