Recipe Ingredients for Chicken with Lime Sauce

24 oz Fresh Boneless Skinless Chicken Breasts
0.25 tsp Salt, Table
0.25 tsp Pepper, Black
0.67 tbsp Olive Oil
0.75 cup Light
3 tsp packed Sugars, Brown
1.5 fl oz Lime Juice
2 tsp Classic Dijon Mustard
0.13 cup (8 fl oz) Water
0.02 cup Cornstarch
1 tbsp 67% Buttery Spread

Recipe Directions for Chicken with Lime Sauce

  1. Place each chicken breast half between 2 sheets of heavy duty plastic wrap; pound to 1/4 inch thickness using a meat mallet or small heavy skillet. Sprinkle chicken with salt and pepper.

  2. Heat oil in a large nonstick skillet coated with cooking spray over medium high heat. Add chicken; cook 4 minutes on each side or until browned. Remove from pan; keep warm.

  3. Add broth, sugar, 2 tbsp juice, and mustard to pan, and cook over medium heat, scraping pan to loosen browned bits.

  4. Combine water and cornstarch in a small bowl. Add cornstarch mixture to pan; stir with a whisk. Bring to a boil over medium-high heat; cook 1 minute or until slightly thick. Add 1 tbsp lime juice and butter, stirring with a whisk until butter melts. Return chicken to pan; simmer 2 minutes or until chicken is thoroughly heated.
