A very limey soup that's filling and low in calories.

Recipe Ingredients for Chicken, Lime, & Rice Soup

10 cups water
10 chicken bouillon cubes
1/2 cup chopped cilantro
3/4 cup lime juice
1 tbsp onion powder
1 medium tomato
1 medium avocado
1 tsp salt
1 tsp pepper
1/2 tsp dried thyme
15 oz rotisserie chicken
2 green onions
2 cups uncooked jasmine rice
5 tsp minced garlic

Recipe Directions for Chicken, Lime, & Rice Soup

  1. Make rice separately and set aside.

  2. Bring water to a boil and add bouillon cubes.

  3. Low heat so that the water is at a simmer.

  4. Chop all the vegetables up and add to the broth, stir.

  5. Add the rest of the ingredients (excluding the rice).

  6. Add rice to each individual serving as needed to avoid rice sitting in broth leftovers.
