serving = 14.35 oz, with lettuce. My own adaptation. You may serve this with additional peanut satay sauce but it has 45 cals per tbsp. i kept it as low-cal as I could without sacrificing flavor.

Recipe Ingredients for Chicken, Lettuce Wraps

16 oz boneless chicken thighs
3 tbsp soy sauce
1 tsp sesame seeds
1 tsp sesame oil
1/2 tsp ginger powder
1/4 tsp black pepper
1 tbsp canola oil
1 tbsp shallot, minced
1/2 cup celery, minced
3/4 cup carrot, grated
8 oz bamboo shoots, minced
8 oz mung bean sprouts, chopped
2 tbsp peanut satay sauce
6 iceburg lettuce leaves

Recipe Directions for Chicken, Lettuce Wraps

  1. toss the list of ingredients from chicken through black pepper into a food processor and pulse several times until the meat is chopped but not finely ground. place in an airtight container or ziploc baggie and marinate for 2-8 hours.

  2. heat the oil in a skillet over medium heat and add the celery & shallot, sweat for a few mins. Add the meat and increase heat to med-high. cook almost through, then add carrot & bamboo shoots. cook a little longer. when meat is completely cooked through, turn off the heat, add the chopped sprouts and satay sauce and toss together.

  3. serve with lettuce leaves on side as a little burrito-wraps.
