Recipe Ingredients for Chicken Lettuce Wraps

8 leaf, medium Lettuce, Iceberg
1 slices (1" dia) Ginger Root
2 clove Garlic
8 grams Serrano Peppers
12 oz crumbled Chicken, ground, raw
1.5 cup, pieces or slices Mushrooms
5 medium (4-1/8" long) Onions, Spring Or Scallions
16 oz Coleslaw Mix
2 tbsp Soy Sauce
1 fruit (2" dia) Limes

Recipe Directions for Chicken Lettuce Wraps

  1. Ingredients:

  2. ? 8 iceberg lettuce leaves, rinsed and dried

  3. ? 1 inch piece of ginger, minced

  4. ? 2 cloves garlic, minced

  5. ? 1 serrano pepper, chopped (deseeded if you prefer less heat)

  6. ? 3/4 pound extra-lean ground chicken

  7. ? 1 1/2 cups chopped mushrooms

  8. ? 1 bunch spring onions, white and pale green parts only, sliced

  9. ? 2 cups coleslaw mix

  10. ? 2 tbsp reduced-sodium soy sauce

  11. ? Juice and zest of one lime

  12. Preparation:

  13. Spray a large nonstick skillet with cooking spray. Add ginger, garlic and chile pepper, and cook for 1 minute, until fragrant.

  14. Add ground chicken and mushrooms, and cook for 8-10 minutes, until ground chicken is no longer pink. Add coleslaw mix and green onions and cook for 2 minutes.

  15. Add soy sauce, fish sauce, lime juice and zest.

  16. Transfer chicken mixture into a serving bowl.

  17. For the dipping sauce, whisk soy sauce, vinegar, water, ginger, brown sugar and onions together. Divide into four small bowls.

  18. Place two lettuce leaves on each of four plates, and allow people to scoop chicken into their lettuce wraps. Serve with jasmine rice, if desired, and some dip.
