Chicken and Lentil Stew with Ginger

Recipe Ingredients for Chicken and Lentil Stew

250 g red lentils, uncooked
1000 g chicken thighs, skinnless, uncooked
210 g bacon, lean
180 g ginger
2 peppers
2 onions
300 g leek
300 ml pork stock
300 ml chicken stock
250 g mushrooms, uncooked
350 g celery
250 g pot barley, uncooked
3 garlic cloves

Recipe Directions for Chicken and Lentil Stew

  1. rapidly cook lentils for 10 mins (or as directed)

  2. fry bacon and chicken and add to casserole pot

  3. fry leeks and onions and add to casserole pot

  4. add everything else in casserole pot

  5. put in oven for 3 hours.
