Delightfully fresh Italian style main dish

Recipe Ingredients for Chicken w/Lemon, Spinach and Sundried Tomatoes

1 1/2 lbs chicken breast, boned
1 c tomatoes, sundried, sliced in strips
1 c spinach, fresh
2 T basil, fresh, sliced thin
2 T garlic, fresh minced
3/4 c feta cheese
1 olive oil spray
2 T white wine
1/8 c lemon juice
4 c noodles

Recipe Directions for Chicken w/Lemon, Spinach and Sundried Tomatoes

  1. Rinse and pat dry chicken breasts.

  2. Spray saute pan very lightly with olive oil and sear chicken breasts till golden and carmelized on the outside, cooked on the inside. Turn frequently to keep from sticking. Start with higher stove temp and adjust as necessary to cook through but not burn or allow too much water to accumulate.

  3. In the meantime, slice sundried tomatoes and spinach leaves.

  4. Cook pasta according to package. I use bowtie pasta.

  5. When chicken is cooked through, add the tomatoes, basil, garlic and spinach and stirfry till heated through and spinach and basil wilt.

  6. Add wine and saute briefly to blend flavors and cook off alcohol.

  7. Toss chicken mixture with pasta, adding feta and lemon juice to finish.

  8. Note: Calorie Counter didn't differentiate on the sundried tomatoes. Nor could it differentiate on bowtie pasta. Calorie Counter puts it at 592 cals which seems high to me but the ingredients are fresh, don't use but a spray of the olive oil and whole wheat pasta could give one a healthier edge on the carbs. The feta (could be a low-fat variety) should only be an accent flavor. Still a pretty healthy dish.
