Simple one-skillet dish. Delicious. Can be used with Turkey cutlets.

Recipe Ingredients for Chicken with Lemon-Basil Sauce

4 tbs. olive oil
4 chicken breast, boned and skinned, pounded to cutlet thickness.
3 tbs. lemon juice
4 garlic cloves, chopped
2 tsp. lemon peel, grated
1 cup chicken broth, low sodium
2 tbs. butter, chilled
3/4 cup basil, chopped

Recipe Directions for Chicken with Lemon-Basil Sauce

  1. Heat olive oil inlarge heavy skillet over medium-high heat.

  2. Sprinkle chicken with salt and pepper.

  3. Add chicken to skillet and saute' until brown and cooked trhough, about 5 minutes per side.

  4. Transfer chicken to platteer and tent with foil.

  5. Add lemon juice, garlic, and lemon peel to same skillet.

  6. Stir over medium-high heat until fragrant (about 30 seconds).

  7. Add chicken broth, boil until reduced.

  8. Add butter and stir to sauce consistency.

  9. Mix basil into sauce.

  10. Season to taste with salt and pepper.

  11. Spoon sauce over chicken and serve.

  12. This is a simple one-skillet meal.
