A hearty soup made with leek, potato and chicken breast.

Recipe Ingredients for Chicken and Leek Soup

1 medium onion, peeled and diced
1 large potato, peeled and diced
1 tbsp sunflower oil
1 cup water
2 leeks, sliced
2 chicken breast
1 1/2 cups milk
1 black pepper

Recipe Directions for Chicken and Leek Soup

  1. Soften the onion and potato in the oil for 5 minutes. Add the leeks and the water and place the chicken on the top. Seal the pan with a lid and cook gently for 20-30 minutes. When the veg and chicken are cooked, remove the chicken and put to one side. Blend the soup to a smooth consistency and add the milk. Shred the chicken into small pieces and add back into the soup. Season to taste and sprinkle with chives to serve.

  2. For an nice alternative, consider using low fat coconut milk instead of cows milk.
