This is a favorite family dish by my mother. It's one of the few dishes that everyone in the family will eat.

Recipe Ingredients for Chicken & Leek Pie

1 lb Chicken, Roasting, Meat Only
1 cup chicken stock
4 medium bacon
3 tbl butter
3 leeks
3 tbl flour
1 pinch salt
1 pinch black pepper
1 pie crust
2 tbl parsley
2 cups whole milk

Recipe Directions for Chicken & Leek Pie

  1. Roast a whole small chicken.

  2. Fry four slices of Bacon and set aside to drain off fat.

  3. In a pan, saute the diced leek in butter until soft.

  4. Then add flour, salt and pepper.

  5. Add cup of stock (or a cup of the chicken dripping) and the milk.

  6. Simmer until thick.

  7. Then add chicken (diced), bacon and parsley.

  8. Add the mixture into a double pie crust.

  9. Place in oven at 400 degrees for 45 minutes.
