This can be eaten on its own, under pastry or with pasta, rice or potatos. You can substitute Chicken stock for the milk and add any other vegetables

Recipe Ingredients for Chicken & Leek Pie filling

243 g chicken, cooked
405 g leeks
1 tbsp corn starch
250 ml 1% milk
2 oz cheddar cheese, old

Recipe Directions for Chicken & Leek Pie filling

  1. Slice the leeks and slowly saute them.

  2. Cut up the cooked chicken (left overs for us). Add chicken once the leeks have softened.

  3. Put the cornstarch into a bowl and add the cold milk a little at a time to mix in thoroughly.

  4. Pour milk mix over the chicken and leeks and slowly heat until thickened.

  5. Keep on a low heat to ensure the chicken is hot through.

  6. Add the cheese at the last minute.
