Chicken Laredo Recipe

Adapted from an old Reader's Digest cookbook. Great alone or over rice or noodles, just don't forget to add the calories!

Recipe Ingredients for Chicken Laredo

1 lb. boneless, skinless chicken breast, in bite size pieces
2 T. olive oil
1 medium onion, chopped
1 small sweet green pepper, chopped
1 small sweet red pepper, chopped
1 garlic clove, minced
2 t. flour
1/4 t. ground cumin
1 lb. fresh tomatoes, chopped
1/8 t. pepper
1/8 t. cayenne pepper
1 T. parsley

Recipe Directions for Chicken Laredo

  1. Spray skillet with cooking spray and cook chicken until no longer pink. Remove and keep warm.

  2. In same skillet add oil, onion, peppers and garlic. cook until softened.

  3. Blend in flour and cumin. Cook, stirring, for 1 minute.

  4. Add tomatoes, pepper and cayenne and cook for 5 minutes.

  5. Add the chicken back in and simmer until heated through and flavors have blended.
