Chicken and Kumara Casserole Recipe

Winter warming chicken casserole. Serve with pasta.

Recipe Ingredients for Chicken and kumara casserole

1 kg chicken breast
750 g sweet potato
4 medium carrots
1 large onion
2 garlic cloves
1 tbsp fresh parsley
1 tbsp fresh basil
400 grams tinned tomatoes
1 cup white wine
1 1/2 tbsp oatmeal
1 tsp salt
1/2 tbsp olive oil

Recipe Directions for Chicken and kumara casserole

  1. Chop chicken into 3 cm cubes and toss in oatmeal to coat.

  2. Chop vegetables into cubes.

  3. Crush garlic.

  4. Heat oil in large casserole dish.

  5. Cook chicken in pan until golden.

  6. Add onions and garlic and cook 5 minutes or until onions begin to colour.

  7. Add salt, tomatoes, wine, sweet potato and carrots and cover.

  8. Cook at low simmer, stirring occasionally, for 1 hour or until all ingredients are tender.

  9. Remove from heat and stir through chopped basil and parsley.

  10. Serve or freeze in portions.
