Chicken a La King Recipe

Using precooked chicken and frozen vegetables makes for a quick and easy recipe. The original recipe called for 2 t. cornstarch, but it did not thicken enough. You could try less evaporated milk and less cornstarch. I also made a veggie only version for my vegetarian son. My family ate theirs over mashed potatoes. I chose quinoa; but rice works well too.

Recipe Ingredients for Chicken a la King

1 cup cooked chicken, diced
10 ounces mixed vegetables, frozen
1 1/2 cups chicken broth
2 T. corn starch
15 ounces evaporated milk
1 salt and pepper to taste

Recipe Directions for Chicken a la King

  1. Combine chicken, vegetables and broth in a medium saucepan over medium heat.

  2. Stir all together and simmer until heated through.

  3. In the meantime, whisk cornstarch and milk in a small bowl.

  4. Add to chicken mixture and simmer stirring constantly until thickened.

  5. Season with salt and pepper to taste.

  6. Serve over brown rice or quinoa.
