Recipe Ingredients for Chicken a la King

1/2 small green pepper, chopped (or 1 cup fresh or frozen peas)
4 ounces canned mushroom pieces and stems, drained (11264) or 1 cup sliced mushrooms
1/4 cup unsalted butter or margarine (1145)
1/3 cup flour
1/8 teaspoon of salt
1/4 teaspoon pepper
1 1/2 cups (light) chicken broth (105273)
1 1/2 cups lowfat milk
2 cups (chopped) cooked chicken
2 ounces pimientos, drained (102523)

Recipe Directions for Chicken a la King

  1. Melt the butter or margarine in a 3-quart sized saucepan over medium heat. Add the green pepper (or peas), mushrooms and saute until tender and fragrant, about 5 minutes.

  2. Stir in the flour, stirring constantly until bubbly. Gradually add the chicken broth and milk. Cook and stir until the mixture boils. Boil for a full minute.

  3. Stir in the chicken, pimientos, salt and pepper to taste. Cook and stir for a few more minutes to thoroughly heat the chicken and to blend the flavors.

  4. Serve over rice or biscuits or toast or noodles.
