A lower calorie version of a comfort food favorite

Recipe Ingredients for Chicken a la king

1 tbl olive oil
1/2 onion
1/4 green pepper
1 zuchinni
10 mushrooms
2 chicken breast
1/2 cup flour
3 cups chicken broth
2 egg whites
3/4 cup skim milk
2 cloves garlic
16 oz mixed vegetables

Recipe Directions for Chicken a la king

  1. Heat oil over medium heat. Add onion, garlic, peppers, zuchinni & mushrooms. Cook until tender, about 3 minutes. Remove vegetables and set aside.

  2. Add flour to chicken broth in skillet. Whisk and cook over medium heat for 4 minutes or until mixture is thick. Fold in diced chicken & vegetables and continue cooking.

  3. Combine egg whites and milk. Whisk into chicken mixture and cook an additional 5 minuts. Serve over reduced calorie buttermilk buscuits.
