a fun way to serve dinner. **Note: I wasn't sure how to calculate the marinade, since you don't consume all of the oil. Therefore, I reduced the oil in the ingredients, but you should use 1/2 cup of oil. I figured maybe a fraction of the oil actually goes into the meat...???

Recipe Ingredients for Chicken Kebabs

20 oz boneless skinless chicken breast
1 cup bell pepper
1 cup cherry tomatoes
1 cup zucchini
1 cup onion
1/8 cup olive oil
1/3 cup lemon juice
3 cloves garlic, minced
1 tablespoon fresh thyme, chopped
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh oregano, chopped
1/2 teaspoon salt

Recipe Directions for Chicken Kebabs

  1. Marinade chicken (see note above about the marinade)

  2. Cut everything into bite size chunks.

  3. Thread onto skewer. If using wooden skewers, soak them for 10 or so minutes.

  4. Cook on grill.
