Chicken & Asparagus Casserole

Recipe Ingredients for Chicken Jeremiah

32 1/4 ounces cream of chicken soup
2 lbs fresh asparagus
3/4 cup mayonnaise
1/2 cup lemon juice
6 cups steamed rice
3 fillet chicken breast fillet
2 chicken thighs fillet
2 1/2 cups shredded cheddar cheese

Recipe Directions for Chicken Jeremiah

  1. Blend cream of chicken soup, mayo, & lemon juice to create a sauce.

  2. Layer rice, chicken and asparagus in casserole dish. Top with sauce and cheese.

  3. Bake 20-30 minutes at 350 degrees until bubbling in the middle and cheese is lightly browned. Let sit for 10 minutes before serving.

  4. I always eat this with a huge salad. It's really tasty but loaded with calories so the salad helps to fill you up so you don't eat quite so much :)
