Satisfying twist on Jambalaya - not sure where the recipe came from but delicious

Recipe Ingredients for Chicken Jambalaya

240 grams Cajun Style Andouille
1 1tsp Olive Oil
2 cup Diced Tomatoes No Salt Added
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 large Onions
1 cup, diced Celery
1/2 cup Parsley
1 cup Organic Free Range Chicken Broth
1 tsp, ground Basil, Dried
1/4 tablespoon Oregano

Recipe Directions for Chicken Jambalaya

  1. heat olive oil over medium high flame

  2. add sausage and cook until brown (7 mins)

  3. add bell pepper, onion and celery (saute for 10 mins or until onion is golden brown)

  4. Add garlic, parsley, oregano and bay leaf, cook for 2 mins

  5. Add tomatoes and chicken broth (bring to a boil),

  6. Cover and reduce heat

  7. Simmer for 10 mins

  8. Stir in rice, cover and simmer for 10 mins

  9. season with salt, pepper and hot sauce to taste

  10. Sprinkle green onions on top
