Low Cholesterol version of a Cajun staple!

Recipe Ingredients for Chicken Jambalaya

2 T. vegetable oil
1 1/2 c. chicken breast, boneless, skinless, cooked, diced
1/2 c. celery, diced
1/2 c. onion, diced
1/2 c. carrot, diced
1/2 c. green pepper, diced
1/2 c. red pepper, diced
1 3/4 c. chicken broth, low sodium
1 c. tomato, diced
1 t. tabasco
1/4 t. oregano, dried
1/4 t. thyme, dried
1/8 t. allspice, ground
1 c. brown rice, uncooked

Recipe Directions for Chicken Jambalaya

  1. Cook rice acording to package directions and set aside.

  2. Place the vegetable oil in a skillet and heat over medium high heat. Saute the vegetables until tender. Add the tomato, chicken broth and spices. Saute until the liquid is mostly reduced. Serve over rice.
