Recipe Ingredients for Chicken with Hot Peanut Sauce

2 T Ginger, fresh, minced
2 T Garlic, fresh, minced
1 1/2 T Peanut oil
1 c Chicken broth
1/2 c wine, sherry
1/3 c Peanut butter
2 T Soy sauce
2 T Vinegar, rice wine
2 t Sesame oil
1/8 t pepper, black, ground
8 oz Chicken, breast

Recipe Directions for Chicken with Hot Peanut Sauce

  1. In small saucepan heat peanut oil over high heat; add garlic and ginger root and saute briefly, about 30 seconds. Add remaining ingredients except chicken, vermicelli and scallion and bring to a boil. Reduce heat to low and cook, stirring constantly, until sauce is smooth and thickened, about 3 minutes; add chicken and stir to combine.

  2. Serve over hot vermicelli and sprinkle with scallion.
