A light pasta dish with great herb flavor!!

Recipe Ingredients for Chicken and Herb Penne

1 lb chicken breast
4 oz whole wheat penne
1/2 cup white wine
2 tbsp basil
1 tbsp oregano
2 tbsp minced garlic
1 tsp ground red pepper
1 tbsp olive oil

Recipe Directions for Chicken and Herb Penne

  1. Cook the penne according to the package directions.

  2. Cut the chicken breast into bite sized cubes. Spray a skillet lightly with the olive oil and cook the chicken and garlic. Add the wine and herbs to the chicken and cook until the wine has almost completely evaporated.

  3. Once the penne is cooked, add a ladel full of the pasta water to the chicken and herbs. This will help the herbs stick well to the pasta.

  4. Drain the rest of the water from the pasta and stir in with the chicken and herbs.

  5. Split into four servings and serve. Tastes great with a sprinkle of grated parmesean!!
