Chicken Hash with potatoes, peppers, and onions

Recipe Ingredients for Chicken Hash

2 lbs chicken, breast
1 large onion, diced
8 ounce tomato paste
2 tbsp garlic, crushed
1 tbsp oregano
1 tbsp dried basil
1 large red pepper, diced
2 tbsp olive oil
1/2 tsp black pepper
1 tsp salt
2 large potatoes
2 tbsp butter

Recipe Directions for Chicken Hash

  1. In a large skillet add olive oil, basil, oregano, half tbsp of garlic, and chicken (diced). Heat until chicken is cooked through. Set aside.

  2. In the same pan, add tomato paste and peppers. Cook until peppers are firm and slightly browned then add to chicken and spices.

  3. In the same pan, add butter, remaining garlic, salt, pepper, potatoes (diced) and onions. Cook until onions and garlic are slightly browned and potatoes are fork tender. Reduce heat and add all ingredients. Mix and allow to heat back through.
