Recipe Ingredients for Chicken Hash

2 slices whole grain bread
1 1/2 tbsp grated Parmesan cheese
1/8 tsp pepper
1 tbsp butter
1 large onion, chopped
1 stalk celery, chopped
340 grams chicken breast, chopped
1 tbsp flour
1 tsp thyme
1/2 tsp fresh chives
1/4 tsp salt
1 cup fat-free milk
289 gram potatoes, cubed
1/4 cup sliced mushrooms

Recipe Directions for Chicken Hash

  1. combine bread, cheese and pepper in a food processor.

  2. Blend until coarse.

  3. preheat oven to 350

  4. spray 2 quart casserole dish with nonstick cooking spray.

  5. In a large skillet, melt the butter over medium heat.

  6. Saute onion & celery until soft.

  7. Add chicken, mushrooms & potatoes.

  8. Sprinkle with flour, thyme, chives and salt. Cook, stirring frequently for 5 minutes.

  9. Add milk and cook and stir for another 2-3 minutes.

  10. Transfer into prepared casserole dish.

  11. Top with bread crumb mixture and bake for 35 minutes.
