Recipe Ingredients for Chicken Hash

2 slices wheat bread
2 tbsp. parmesan cheese
1 tbsp. butter
1 red onion
1 celery stalk
1 lb. chicken breast
1 tbsp. flour
1 tsp. thyme
1 cup skim milk
1 bell pepper
1/4 tsp. paprika
2 potatoes

Recipe Directions for Chicken Hash

  1. In a food processor, combine the bread, cheese and black pepper. Pulse until the consistency of coarse crumbs. Preheat the oven to 350 degrees and spray a casserole dish with nonstick cooking spray.

  2. Melt butter in a large skillet. Saute the onion and celery until softened, about 5 minutes. Add the chicken, sprinkler with flour, thyme and salt. Cook for 5 minutes. Stir in the milk and cook, stirring frequently, until sauce thickens - about 3 minutes. Remove from the heat and stir in the bell pepper and the potatoes.

  3. Transfer to casserole dish and bake until golden brown, 30-35 minutes.
