a variation on regular chicken gumbo soup - adding leaner meats and beans and greens for increased fiber

Recipe Ingredients for Chicken Gumbo Soup

2 lbs chicken breast
1 lb turkey bacon
90 grams sliced turkey pepperoni
24 oz tomato sauce
6 oz tomato paste
2 cups sliced mushrooms
1 cup diced onions
3 cloves garlic
8 oz chicken soup
8 oz pizza sauce
2 cups lima beans
2 cups garbanzo beans
2 cups mustard greens
1/8 cup rice

Recipe Directions for Chicken Gumbo Soup

  1. Add soup, beans, pizza sauce, tomato sauce and paste and drained garbanzo beans and drained mustard greens into crockpot. Add 5 cups hot water. Sire and start on high 4 hours. Add a few bay leaves, 1/4 teaspoon Taragon, 1/4 teaspoon Curry, 1/4 teaspoon Black Pepper, 1/4 teaspoon Dill Weed, 1/8 teaspoon Caraway, 1/8 teaspoon, 1/8 teaspoon Ginger, 1/8 teaspoon Cayenne Pepper, 1/8 teaspoon, 1/8 teaspoon Celery Seed.

  2. Chop garlic, onion and add sliced mushrooms into a pan with 1 tablespoon olive oil... saute then add lean turkey bacon and fry up until lightly brown.

  3. Cook chicken 3/4 of the way after slicing until lightly brown after emptying skillet used to cook above ingredients.

  4. Cover crockpot and stir occasionally (every 30 minutes or so) - cook on High 4 hours.
